To create this mousse, you’ll need only a handful of simple ingredients. But don’t let the simplicity fool you – this mousse is absolutely divine. Here’s everything you’ll need to make it…

  • Easter Eggs – I try and use the smallest eggs I can find; the ones I use are about 100 grams. This makes the perfect single serving size; but you can use larger eggs in you prefer. Remember you’ll need more chocolate mousse to fill them.
  • Dark Chocolate – For this recipe, I used Cadbury Bournville, but you can swap for your preferred dark chocolate. Try to avoid milk chocolate; it contains a lot more sugar and will change the texture of the chocolate mousse.
  • Cocoa Powder – You can leave this out if you want to, but I like to add a tablespoon of cocoa powder to get a good chocolate flavour.
  • Egg Whites – Make sure your eggs are at room temperature before separating them and whisking the whites. This helps the egg protein bonds break and incorporates air into the mousse, keeping it light and fluffy.
  • Instant Coffee Powder – This is optional but trust me it helps bring out the chocolateyness in the chocolate mousse. You can also use regular instant coffee instead.
  • Vanilla Extract

CONVERT TO CUPS: There is a cup conversion option in the recipe card to convert the ingredients. This is automatic and I can’t guarantee the accuracy. For best baking results, I recommend using digital scales and weighing the ingredients.

Equipment you will need

You’ll need a few basic kitchen tools and equipment and you’ll be all set to make delicious chocolate mousse filled Easter eggs! Here’s what you’ll need…

You’ll also need something to stand the Easter eggs in – I prefer to use an egg carton that I’ve cut up into individual egg cups. Alternatively, you can use regular egg cups or small glasses; depending on the size of the Easter eggs you use.

This step-by-step guide will show you how to make these beautiful Easter treats. Make sure to check out the tips and tricks as well. Here’s everything you need to do…

Making the chocolate mousse

  • Melt the chocolate in a heat-proof bowl over a pan of simmering water as a double boiler or in 30 second blasts in the microwave.
  • When melted add the cocoa powder, instant coffee powder and vanilla extract. Stir everything together and leave to one side to cool.
  • Separate the egg whites and place in a large mixing bowl or a stand mixer bowl.
  • Whisk the egg whites start on a medium speed until they start to thicken up.
  • Gradually increase the speed until the egg whites form stiff peaks and are smooth and glossy; this will take about 3-4 minutes.
  • Add the whisked egg whites to the cooled chocolate mixture and gently fold in until you have a light and fluffy mixture.

TOP TIP: Make sure the chocolate is fully melted and the mixture is smooth before folding in the egg whites. If the chocolate is not melted properly or has lumps, it can make the mousse grainy or uneven in texture.

Filling the Easter eggs

Now, it’s time to assemble the Easter eggs; this is the fun bit…

  • Gently score around the top of each Easter egg with a warm, sharp knife. You may need to go around several times to score through the chocolate. Alternatively you could make a ‘cracked’ pattern rather than a smooth cut.
  • Carefully scoop the chocolate mousse into the hollow centre of the egg, making sure to leave a little room at the top.
  • Chill the Easter eggs in the fridge for at least 2 hours to let the chocolate mousse set.
  • Decorate the top of the Easter eggs with Easter treats, such as Mini Eggs or Creme Eggs, or alternatively you can pop the top back on.

TOP TIP: Stand a sharp knife in a mug of hot water to warm the blade. Wipe the knife dry and then gently score around the top of the Easter egg to remove the top. You’ll need to work quickly as the knife cools. Reheat if necessary.

When you’re ready to indulge, simply crack open the egg to reveal the rich and creamy chocolate mousse filling. It’s like finding a hidden treasure inside!

Top tips for making Easter egg chocolate mousse

Although the chocolate mousse is super easy to make; these are my five top tips for making sure you get the perfect mousse every time…

  • Choose high-quality, dark chocolate – You can use a milk chocolate if you prefer, but I find that using dark chocolate gives a richer flavour and smoother texture. Choose high-quality chocolate that is at least 60% cocoa solids for the best results.
  • Be careful when melting the chocolate – Melting chocolate can be a tricky task – get it too hot and the chocolate will seize and become grainy! So when melting chocolate, it’s important to do so slowly and carefully. Use a heatproof bowl set over a pan of simmering water, and stir the chocolate frequently until it’s completely melted. Alternatively you can melt the chocolate in the microwave but do so in 30 second blasts to avoid burning it.
  • Whisk egg whites well in a clean bowl – To achieve a light and airy mousse, make sure to whisk the egg whites well to incorporate air and create a fluffy texture. Start slowly and gradually increase the speed until you have stiff peaks – but avoid over-whisking! A completely clean bowl is important, as even the tiniest bit of fat can stop your egg whites whisking up properly.
  • Fold the ingredients gently by hand – When folding the chocolate and whisked egg whites together, be sure to do so gently to avoid deflating the mousse. Avoid using an electric mixer, and use a spatula instead, folding the ingredients together in a figure-eight motion until fully combined.
  • Chill the mousse filled eggs thoroughly – When you’ve filled your Easter eggs with the chocolate mousse be sure to chill them thoroughly in the fridge for at least 2 hours. This will ensure that the mousse holds up when adding toppings and has a light and airy texture when served.

To make the chocolate mousse

  • Add the 150 g Dark Chocolate to a heatproof bowl and gently melt in a microwave in 30-second blasts. Alternatively place the bowl over a pan of simmering water and gradually melt it, stirring until smooth.
  • Add the 1 tbsp Cocoa Powder, 1/2 tsp Instant Espresso Powder and 1 tsp Vanilla Extract to the melted chocolate. Stir together until well combined, then eave to one side to cool down slightly.
  • Place 3 Egg Whites in a large bowl and using a handheld mixer, whisk until the egg whites start to stiffen. Gradually increase the speed and whisk until the egg whites form stiff peaks; this will take about 3-4 minutes. Alternatively, you can use a stand mixer with the balloon whisk attachment.
  • Spoon the whisked egg whites into the cooled chocolate mixture and gently fold together with a rubber spatula or large spoon, until you have a light and fluffy chocolate mousse mixture.

Assembling the Easter Eggs

  • Stand a sharp knife in a mug of hot water to warm the blade. Wipe the knife dry and then gently score around the top of 4 Easter Eggs to remove the top. You’ll need to work quickly as the knife cools. Reheat the knife if necessary.
  • You may need to go around several times to score through the chocolate. Alternatively you could make a ‘cracked’ pattern rather than a smooth cut.
  • Carefully spoon the chocolate mousse into the hollow centre of the egg, making sure to leave a little room at the top.
  • Chill the Easter eggs in the fridge for at least 2 hours to let the chocolate mousse set.
  • When ready to serve, decorate the top of the Easter eggs with Easter treats, such as 50 g Mini Eggs or Creme Eggs, or alternatively you can pop the Easter egg top back on.
