So it seems that Spring has finally arrived… the official first day has been and gone, the clocks have hopped forward and looking out of the study window the sun is shining, the skies are blue and it’s warm!
And just before you say, why aren’t you out enjoying it? I have been, it’s beautiful out there. Roll on summer! But as I sit here with the warmth of the sun on my face, I’m hoping that it lasts until next weekend for Easter and the long bank holiday.
The last month has been a busy one with work and life have balanced quite nicely; we’ve been away for a long weekend in London, a city break in Prague as a surprise for his birthday, and 2 film shoots for work, which I absolutely love despite the long hours and lots of running around.
Blog posts are in the works for London and Prague as we speak, filming… not so much, but actually, its another thing that I do so maybe I’ll think about it. For the moment let’s stick with the food…
Prague was stunning, it’s the first time either of us has ever visited and although we crammed so much into 3 days there is still a lot we didn’t get to do, and I’d love to go back. We were there just as the city was getting set up for Easter, the main square in Old Town was decked out with beautiful Easter trees, eggs, ribbons, stalls etc and it was a completely different experience to what Easter seems to be over here in the UK, chocolate!
Now I’m not saying that chocolate is a bad thing, far from it… and looking through photos when we go home, something in my mind clicked and moments later I was head in the cupboard, raiding it for bits and pieces to experiment with. The pastel decorations and ribbons got me thinking about swirls and sprinkles, mini eggs and patterns… 30 minutes later, this Easter Chocolate Bark was chilling on the kitchen counter.
Check out the shelves of supermarkets, high street chocolate stores or even chocolatiers, they’ll all have a chocolate slab rammed full of goodies, maybe candy or sweets, dried fruits and nuts, biscuits and cookies, you name it there is nothing really that you can’t chuck on your chocolate to give it a boost… jelly beans and popping candy is my current favourite. The only limit is either what’s in the cupboard or your imagination. And like the cake mix cookies, this Easter chocolate bark is great to do with kids. Just be warned that you might end up with more candy than chocolate as they pile everything imaginable on, or you’ll start with full bowls of sweets and they magically disappear before they get onto the chocolate, ha!
For this Easter Chocolate Bark, I had a bag of micro eggs waiting to be used, normal mini eggs would work (but they don’t last long in this house), mini marshmallows and gummy carrots – how cool do those look? If I was working it up for something other than Easter I’d probably dig out some mini Oreos or Maltesers, more marshmallows (quite possibly the best candy to have with chocolate), fudge pieces and to balance it out some dried fruit. Ooooh, how about freeze-dried raspberry pieces for a burst of tartness and the sweet chocolate… Hmmmm!

Easter Chocolate Bark
Ingredients
- 500 g Dark Chocolate
- 100 g White Chocolate
- 50 g Mini Eggs
- 50 g Gummy Carrots
- 25 g Mini Marshmallows
- 4 tsp Sprinkles
Instructions
- Chop the dark chocolate into small pieces and place in a medium bowl. Gently melt the chocolate in a microwave or place the bowl over a pan of simmering water and gradually melt it, stirring until smooth.
- Repeat with the white chocolate.
- Line a large baking tray with greaseproof paper. Pour the melted dark chocolate onto the paper and then spread into a rectangle with a palette knife. Let the chocolate cool slightly.
- Pour the melted white chocolate over the dark chocolate and swirl together, using a skewer or a knife, to create a marble pattern.
- Add the chocolate eggs, gummy carrots and mini marshmallows to the chocolate, and then the sprinkles.
- Leave the chocolate bark to set at room temperature for 2-3 hours.
- Use a sharp knife to break the bark into smaller pieces.
