Jaffa Cake Brownies

Deliciously thick and fudgy, these loaded Jaffa Cake brownies, pack a chocolate orange hit, that will keep you going back for more.

  • Preheat the oven to 180C/350F, and line a brownie tin with baking parchment.
  • Melt the chocolate and butter together over a double boiler or in a microwave.
  • In a large mixing bowl, pour in the chocolate mixture and add the caster sugar, orange zest and eggs, and beat together until silky and smooth.
  • Add the flour, cocoa powder and baking powder to the mixture and gently fold together with a spatula.
  • Pour half the batter into the lined brownie tin, and smooth level. Place the first layer of Jaffa Cakes on top of the brownie batter, chocolate side down.
  • Add the remainder of the brownie batter and smooth layer. Place the second layer of Jaffa Cakes on top of the batter, with the chocolate side up.
  • Bake for 45 minutes, until firm but still a little gooey in the centre. Leave to cool and firm up before taking out of the brownie tin.

Notes

  • The Jaffa Cake brownies will keep in an air-tight container for up to 3 days, or you can freeze for up to 1 month; but make sure they are well wrapped before freezing, and defrost fully before eating.
  • Instead of full size Jaffa Cakes, use the minuature ones and cut into smaller slices for bite-size treats.
  • Swap the 70% dark chocolate for a chocolate that has orange pieces or zest added into it, Lindt Excellence Orange Dark Chocolate is a perfect swap.
